As far as the pre-deep fried tofu is concerned, I've seen it at the Asian market but have never tried it. If you choose to use it, it will probably be fine but I can imagine it will be a little soggier because you're not getting the crispiness of a freshly fried tofu. In that case you can skip the boiling water step. On step two, the best way to explain is to direct you to the two bottom photos, the tofu usually comes in a block and you want to slice the block to match the slices in the photos. And yes you are soaking the tofu for 30 seconds in boiling water before you fry it. Tofu will not fry right if it's too wet. It'll just be soggy and you don't want that. To get any crispiness from it, you need to remove as much water from the tofu as possible. Boiling the tofu brings moisture to the surface of the tofu so you can better soak it up with the paper towels. However, I am what is referred to as a lacto-ovo vegetarian. That means I don't eat any meat, fish, or poultry but I still do eat eggs and diary products.
